I'm a Newbie. Which configuration do I use to Move files? i.e., Compare, overwrite destination if newer, copy if it doesn't exist and delete all files in source?

FreeFileSync (FFS) is, as the name implies, primarily a synchronization program. What you describe is not a Sync but, like you state yourself, a Move.
FFS can do the first part for you (Compare, overwrite destination if newer, copy if it doesn't exist ) when you use the Update sync variant. FFS can not automatically do the last part.

However, you can do the last part (delete all files in source)
EITHER manually,
OR define the deletion of all files in the source as a task FFS runs On Completion or On Success (see at he right bottom of the Synchronization Settings window (F8) ),
OR run both FFS and then the deletion of files in the source from a *.bat or *.cmd script.
