So what would you say are the best practices for Windows 10 FFS backup to a HDD? The folders I listed? Any exclusions?

Backing up to a USB flash drive would be probably faster than to a USB attached HDD? What are the database options? I've read some posts of people losing data after trying FFS for the first time.
