Not every time do I want all folder pairs saved in a ffs_gui to be active for syncing.
Yet I don't enjoy deleting and then adding back the pairs I didn't want to sync that time.
Request: May you add an option for each folder pair to disable or enable it?

You don't need to add pairs back.
Simply save a sync configuration of all relevant pairs and delete the pairs you want to sync that time, BUT DO NOT SAVE the modified configuration. Next time you want to run FFS, open the saved (full) configuration again.
Alternatively, you can save separate configurations for different logical groups of left-right pairs, and select (in the GUI left-top window) the combination of configurations you want run at that time.

Hi Sam,
This might be a little easier because you don't have to delete anything, and it doesn't disrupt the list:
You could try to use the synchronization settings funnel filter to change the Include/Exclude filter for each pair. In the middle column, click on the funnel. (NOT the big funnel at the top which controls global settings for the entire group, but the smaller one between each pair that controls local settings.)
On a separate line in the Exclude box, add a single asterisk: * This overrides the Include settings and tells FFS to Exclude everything.
The funnel color changes from gray to red if it has been modified from the default. There is a "Clear" button in the lower right to revert to the last saved settings. You can do this after the Sync is complete, or just restart FFS to clear the changes.
CORRECTION! The "Clear" button resets the Include/Exclude settings to the default original!, not your previous settings. This is OK if had not modified them before.
As Plerry said, you don't have to save the changes; just modify the filter and run the Sync. When you restart FFS, the previously saved settings will return.
It may be a good idea to back up your FreeFileSync Jobs in case of errors because you will be making frequent changes. To learn where it is stored open a pair and click "Save as...". An Explorer dialog opens. Note its location. Then hit Cancel. Then create and save a new folder pair to maintain a separate backup of your FFS jobs.
