Why? I have full read/write permission to the volume and files?

Probably Apple's "security" garbage again. You may have to explicitly allow FFS some permissions via Settings

Thank you, you reply was very helpful, I appreciate you taking the time to help me out. For anyone else on Apple MacOS:
I went into "System Settings", then "Privacy & Security", then "Files and Folders", then "FreeFileSync", then "Full Disk Access".
Hopefully this may be of some help if anyone else runs into this problem. The strange thing was that FFS was working fine and then this issue came up with no real difference in my environment. ???

It's possible there was an OS update in the background, but who knows since everything is OTA at this point
