I am about to set up an incremental backup where I would like to delete files in the destination if they have been deleted from the source for more than a week. Is it possible to do this?

In FFS you can use Versioning as a deletion method.
This means that files deleted from the source but (still) present in the destination, will be moved from the destination location to a versioning location.
For Versioning you can set a "limit file versions" option, which can be a combination of a number of previous versions and/or deletion from the versioning location based on the time it was moved to the versioning location.
Note that versioning not only moves files from the destination location to the versioning location when those files were deleted from the source location, but also if files in the destination location is overwritten by a newer version of that file as may exist in the source location.
So, deleted files will then still be available for a specified time,
but then not in the destination location but in the versioning location.
