When I sync two folders, the files are copied from one to the other and not transferred.
What should I do if I want the files to be transferred to the destination folder, and deleted from the source folder rather than just copied?

Technically, files are never transferred, but only copied. You will need a batch script that runs after completion that deletes contents in the source directory. Check your sync settings to avoid the files being copied back to the source
