I want to exclude the folder:
c:\users\david\AppData
But I want to include the folder:
c:\users\david\AppData\Roaming\Microsoft\Outlook\
c:\users\david\AppData\Local\Microsoft\Outlook\
c:\users\david\AppData\LocalLow\Sun\Java\Deployment\
How do I have to do if I have previously excluded the AppData folder? I can't do it.

You can't. You would have to exclude all the other subdirectories of AppData. You are better off creating a second pair where you set "c:\users\david\AppData" on the left and "x:\users\david\AppData" on the right, where 'x' is your backup drive letter, and then change the include filter from '*' to those three folders you want:
\Roaming\Microsoft\Outlook\
\Local\Microsoft\Outlook\
\LocalLow\Sun\Java\Deployment\
\Roaming\Microsoft\Outlook\
\Local\Microsoft\Outlook\
\LocalLow\Sun\Java\Deployment\
