Slowdown on mac

I've been using FFS for years and i'm quite happy. Although lately i've noticed a slowdown in transfer speed, usually in the middle of using the program. Example: Today i'm attempting a transfer

between two external SSDs
on a Macbook Pro 2021, 64g memory and an M1 chip.

The speed starts around 500mb per second, then eventually drops to around 170mb.

Is there some other mac process known to commonly interfere with FFS?

Sounds like a write cache filling up and then the the write speeds drops to 'normal' speeds
