Can't Add filter

I want to exclude a folder, where's the add button, or only in the donation editition

You can edit the (global) Include and Exclude Filter rules via the (red) funnel-icon mid above the left and right base location in the FreeFileSync (FFS) GUI. Pressing F7 does the same.
You can also add items to your Include and/or Exclude Filter by running a Compare, right-click a file or folder and via the context menu add such item to your Include or Exclude Filter.
Global filter rules apply to all your left-right base folder pairs.
You can also set additional local rules per left-right base folder pair, via the smaller funnel icon mid between each left-right base folder pair.
Obviously this is only relevant if your sync has more than one left-righ pair.
The FFS Filter features are not donation or business edition specific, and just as well available in the standard edition.
