We have an older file server that cannot be moved off of a backup device on the network, to put back in the VMWare vSphere client on the VxRail. I created a new file server VM, and transferred about 8TB of data from the old to the new. And like an idiot, I didn't tell it to copy folder permissions. CAN I do something to fix this, something simple? Or do I have to wipe the new server, and re-transfer all that data off the old to the new again? (Took about a week)
Please help! Also, what should I have checked in the config to have done this right the first time?

In FFS settings, you can check the box to copy ACLs and the such. This would require a resync of the data though. Look into ROBOCOPY, many people in this forum have used that to accomplish this goal
