I am looking for a way to backup a specific file each time it is saved, while adding a timestamp to the filename.
Can FreeFileSync do that? If so, please walk me through it.

Note that the above mentioned Versioning retains a copy of the previous version each time a file was changed in between FreeFileSync syncs, not each time a file is saved.
You may however use RealTimeSync to monitor folders for changes, and upon detecting changes to start an (FFS) sync.
The combination of the two brings you pretty close to what topic starter seems to want.

if you have the time and patience, can you provide a bit more detail on how to do this?
Also, I've not found how to sync a specific file using FFS since it only lets me specify folders. I can use a filter to indicate the file I want to include, but I don't see how to exclude everything else.

To "exclude" everything else, remove "*" from the include section. That star means 'everything'. You should only have a single line for your file in the include section.
