SyncToy synchronize mode (according to the help file) does this "New and
updated files are copied both ways. Renames and deletes on either side are
repeated on the other."
I think FFS Automatic is different: it only checks whether files exist on both
sides, so a new file on one side will be treated the same as a deletion on the
other side. Is this right? And is there any way to make FFS behave like
SyncToy?
Mirror mode does not do what I want: to be able to make deliberate changes on
either side (including deleting and making new files) and have them mirrored
to the other.

No, <Automatic> mode has exactly the same semantics like Synctoy: i.e.
creates, changes and deletions are propagated. Perhaps you just should give it
a try ;)
