I think I've stumbled on the solution! I had a fast ethernet switch in use, moved it and found another machine experienced network issues. The problematic sync pair that led me to start this thread now works properly again as long as the switch is not in use. I'd guess that sync pair would have been ...

I just tried the problematic sync pair again - Windows 7 Pro 64-bit networking crashed requiring a reboot of the FFS host PC. I downloaded Microsoft Sync Toy 2.1 and ran the same pair - successful completion (but took an absolute age).
Any clues to help sort out the FFS problem, anyone?

I updated to FFS 6.12 and thought for a while the problem was solved, but it's not. It's not definitely reproducible, but the crashes only occur when synchronising files on the Linux machine with a Windows 7 32-bit machine. Both those machines have the files on USB-connected external drives.
