Good to hear that the issue can be fixed!
As I said, after deleting/re-creating ~/Library/Application Support/FreeFileSync several times, FFS has been working fine for me … so I can wait for the next stable release ;)

There are some files/folders in
/private/var/folders/9t/
like
com.apple.bird
com.apple.dock.launchpad
com.apple.LaunchServices.dv
com.apple.nsurlsessiond
where only the non-admin user that installed FFS last has read/write access.
Would that have something to do with it?

I have 2 NON-ADMIN user accounts: user1, user2.
user1:
installed FFS 'only for me', FFS gets installed in /Users/user1/Applications
At no point did I have to enter an Admin password!
user2:
installed FFS 'only for me'; FFS gets installed in /Users/user2/Applications
Again, at ...

I had deleted EVERYTHING in ~/Library/Application Support/FreeFileSync, the folder was completely empty . NO GlobalSettings.xml, NO LastRun.ffs_gui, etc.
Then I restarted FFS, and a new GlobalSettings.xml was created.
So my previous 3 new filters must have been stored somewhere else ...

Where is that config file? I checked Package Contents of the FFS.app file; is it 'FreeFileSync' in the folder 'MacOS' ?
Anyway, GlobalSettings.xml, when recreated, is not the default, but it gets augmented with previous settings:

I just discovered the following:
macOS Finder will NOT SHOW DOT_UNDERSCORE FILES , even if display of hidden files is active (Cmd+Shift+DOT).
FFS, on the other hand, DOES detect and display them, and therefore wants to sync them.
Just deleting ._files may be pointless, as they'll probably be ...

It seems that if I do the initial sync using FFS, then NO Apple Double files (dot underscore) are created on the ExFAT volume.
So maybe I'll just delete the whole ExFAT volume and sync again, using FFS from the outset.

I have 2 volumes; one is 'Mac OS Extended', the other is ExFAT. So far, I've used 'Synkron'.
I'd guess it wouldn't make any sense to sync back all those dot underscore files on the ExFAT volume to the 'Mac OS Extended' volume …
