With a synchronization under Linux-Mint from a Fritzbox that I operate as a NAS drive without Internet access, the following error message is displayed to me:
Warning The change time of XXXX cannot be written.
I can still run the synchronization or the data will be destroyed.
Unfortunately I cannot set the time in the Fritzbox.

How can I set FreeFileSync so that the copied file has the same date and time as the original file?

FreeFileSync (FFS) always and automatically retains the datetime of files (not folders) when possible.
The protocol used to have FFS connect to a device (e.g. FTP) and/or the device FFS writes itself may not support retaining timestamps of files.
Next to that, some file-systems use local time instead of UTC, which might give rise to problems when traveling across time-zones, or when changing from standard time to daylight saving time and vice-versa.

Under Windows with the tool FreeCommander, this works without any invention. Only with FreeFileSyn under Linux does the program fail and change the timestamp to the system date time.

All my files appear to have been dated to the time of syncing to another location. Is it possible to prevent this?

What error message do you see when failing to set file modification time under Linux and FFS?
What about FFS on Windows? I assume it will correctly set file time, just like FreeCommander.

Does not receive an error message. You can only see on the basis of the properties that the date + time has been changed.
Under Windows I hardly work anymore. There the carry-over works with the original date+-time.

I mean the full text of the warning message "Warning The change time of XXXX cannot be written."
