Can I change the default date/time tag "yyyy-MM-dd hhmmss" to "yyyyMMdd_hhmmss"?

I suppose you refer to the "time-stamp" naming convention used in Versioning.
For the "time-stamp [File]" option I don't think you can (unless you change the program source and compile yourself).
For the "time-stamp [Folder]" option, you can use the "Replace" alternative as described in the Versioning manual page under option 3).
In the user defined folder for Versioning you should be able to use a self-created Macro matching your desired date format (see the Hint + Example in the Macro manual page).
