BackUp from a Networkdrive to a extern harddisc in 2 partition

Hallo,
I want to make a BackUp from a networkdrive which is on my windows 10 explorer to a extern harddisc with 2 partition.
On the first partition must be all folder with the first chapter "A" to "N" and on the second partition must be all folder with the first chapter "M" to "Z".

How can I do this?

You can define multiple left-right folder pairs.
The first left-right pair would pair your local (source) folder to the relevant partition 1 top destination folder,
and would use a local Include Filter (the red funnel icon in between the folder pair) of
\A*
\B*
... (all in between characters need to be listed separately)
\M*
And a second left-right pair would pair your local (source) folder to the relevant partition 2 top destination folder,
and would use a local Include Filter of
\N*
\O*
... (all in between characters need to be listed separately)
\Z*
(it seems you swapped M and N in your post, which would give you an overlap of the M and N folder.
I corrected your assumed mistake in my reply)

Alternatively, you can keep the two local Include Filters set to * (everything) and use local Exclude Filter settings that Exclude \N* through \Z* for the first left-right pair and \A* through \M* for the second left-right pair.
