Is there a way/hack to currently do this or does Zenju need to add it?
Specifically I am wondering about this:
I know when I start FreeFileSync, it looks for profiles in my Mac's Documents folder.
I want to sort all the .ffs_gui profiles into a different folder and have it point there, instead, so FreeFileSync shows it by default on startup.
This would be a lot more useful than cluttering existing Documents.
Can you please tell me how I can do this?

It actually shows you the most recently used .ffs* files. You can select that "Open" button in your screenshot and navigate to a different path and choose any valid .ffs* file.

Assuming this to be the same between the FFS Windows and Mac version:
The sync configurations listed at FFS startup in the Configuration window under the Name and Last sync headings are simply all (or at least the most recent few) FFS sync configurations you have run in/from the FFS GUI, where ever those sync configuration files (*.ffs_gui or *.ffs_batch) may be stored.
You can select (and thereby open) one or more of these listed previous sync configurations and thereby instantly "open" that/those configuration(s), wherever it/they may be stored.
Along this line: different FFS sync configurations may be stored in a single location or spread over multiple locations, and once (recently) run, be shown in the sync configurations list in the Configuration window.
Only when using the Open or Save As icon in the Configuration Window, you may need to browse to the correct or desired file location to open or save your sync configuration.
I don't think FFS allows you to change the location that is opened when clicking the Open or Save As icon though.
But because FFS remembers and shows and directly allows you to open the previous run syncs, I don't think that matters that much.

Hi bgstack15 and Plerry, thanks for the clarification in behavior. I think I misunderstood what is going on, because on Mac, normally when you move a file, an app knows where it went (without having to manually update). This is true of various file management utilities like Hazel.
In this case, I re-sorted all of my recent .ffs into one folder, and when I started FFS, this window was blank, so I wasn't clear on what happened.
I will try to re-point them to the moved .ffs files (all in a single folder now) and reload. It seems like this process could use more improvement to automatically be aware of file moves like that.

That is completely different than Windows then, and I don't really believe that any program you use has that ability. You can't just move a file and expect a program to track that change without something running 24/7 to intercept every file transfer.
