Dumb question here:
Is it possible to just copy folder and files, overwriting the previous copy on the destination drive, and not two way sync between the two folders?
I am assuming in sync settings, this would just be the mirror option?
I dont want to get into a situation where files on my backup drive are deleted, and then the main files are also deleted on my computer, causing me to lose the files forever.
Make sense?

Both the Update and Mirror sync variant will only modify your right-side location; not your left-side location.
The Update sync variant will not delete any item from your right-side location that does not (or no longer) exist in your left-side location;
the Mirror sync variant will delete every item from your right-side location that does not (or no longer) exist in your left-side location (unless such item is added to your Exclude Filter).
Both the Update and Mirror sync variant will only modify your right-side location; not your left-side location.

im a bit ocnfused as i thought this was the can but now in 13.1 I see a rubbish bin icon in the bottom of the comparison window and even when I turn that toff I still see files listed for deletion when I hit the sync button.. this is worrying. I'm afraid to actually do the sync..

On the current version of FFS, changing any options/action from the default 'update' configuration will change it to a custom config automatically. I don't know what is wrong with your setup. Edit: The only way I was able to replicate that behavior was to run a comparison and then manually select files and mark them to be deleted from the left side. Make sure you aren't somehow manipulating to actions after the compare runs
